To cook hard-boiled eggs for egg salad and for babies in general, I make sure that the yolk is fully cooked through. I add eggs in boiling water for around 12-15 minutes to ensure the yolk is cooked fully.

Avocado-Yogurt Egg Salad
Ingredients
- 3 eggs hard boiled
- 1/2 avocado
- 1/8 cup Greek yogurt
- 1-2 kale leaves optional
- paprika optional
Instructions
- In a bowl, use a fork the smash the eggs into small pieces.
- Add in the avocado and mash until smooth.
- Add the Greek yogurt and mix well.
- Optional add-ons: add some finely chopped steamed kale and top with paprika or your spices of choice!
