Sweet Potato Salmon Fish Patties
Ingredients
- 8 oz salmon
- 1/2 sweet potato
- 1/4 onion minced
- 1 egg
- 1/4 cup chickpea flour or breadcrumbs
- 1 tbsp parsley chopped
Instructions
- Preheat oven to 375F.
- Arrange the salmon on a baking sheet. Bake for ~15 minutes minutes or until cooked. Skip this step if using leftover cooked salmon.
- Peel and cube the sweet potato, and steam until soft.
- Mince the onion and parsley.
- In a bowl, flake the salmon. Add in the sweet potato and mash.
- Add ther rest of the ingredients to the bowl and mix well.
- Form into patties (approx 1/2” thick) on a baking tray.
- Bake until internal temperature is at least 165F, approximately 10-15 minutes but it depends on your oven.
