Sweet Potato Salmon Fish Patties

These nutrient-packed sweet potato salmon fish cakes are delicious and easy to make. They are perfect for baby-led weaning, school lunches, and meal prep for your busy family.

Ingredients
  

  • 8 oz salmon
  • 1/2 sweet potato
  • 1/4 onion minced
  • 1 egg
  • 1/4 cup chickpea flour or breadcrumbs
  • 1 tbsp parsley chopped

Instructions
 

  • Preheat oven to 375F.
  • Arrange the salmon on a baking sheet. Bake for ~15 minutes minutes or until cooked. Skip this step if using leftover cooked salmon.
  • Peel and cube the sweet potato, and steam until soft.
  • Mince the onion and parsley.
  • In a bowl, flake the salmon. Add in the sweet potato and mash.
  • Add ther rest of the ingredients to the bowl and mix well.
  • Form into patties (approx 1/2” thick) on a baking tray.
  • Bake until internal temperature is at least 165F, approximately 10-15 minutes but it depends on your oven.
