Low-Sodium Tomato Pasta Sauce

Baby-friendly, low sodium pasta sauce.

Ingredients
  

  • 2 tomatoes medium
  • 2 cloves garlic
  • 1/2 tsp olive oil extra virgin
  • 1 cup mixed salad greens
  • Italian seasoning blend
  • Black pepper
  • 1 oz Ricotta cheese optional

Instructions
 

  • Dice tomatoes and mince garlic. Finely chop the mixed greens and set aside.
  • Add tomatoes, garlic, olive oil, and seasoning. Simmer on low-medium heat for ~5-8 minutes or until the sauce is starting to thicken.
  • Add in the chopped mixed greens. Simmer for another few minutes until the greens are cooked and the sauce is thick.
  • Add black pepper to taste.
  • Mix the sauce with your pasta and (optionally) ricotta cheese. Serve and enjoy!

Notes

If you don't have Italian seasoning mix, you can blend your own! The mix I have contains marjoram, thyme, rosemary, savory, sage, oregano, and basil.
