Banana Pancakes

Easy, toddler-friendly banana pancakes that come together in less than 10 minutes!

Ingredients
  

Wet

  • 1.5 medium banana ripe
  • 1 large egg
  • 3/4 cup milk or milk substitute

Dry

  • 1 cup flour
  • 2 tsp baking powder
  • 1 pinch cinnamon to taste

Instructions
 

  • Mash the bananas in a medium bowl. Add the egg and milk and mix everything together well.
  • In a separate bowl, mix all the dry ingredients together.
  • Add the dry ingredients to the wet ingredients and fold the mixture until just combined.
  • Cook pancakes in a greased pan on low-medium heat, ~2-3 minutes per side or until cooked through.

Notes

You can substitute the 100% white flour with 50% white flour and 50% whole wheat flour, or 75% white flour and 25% almond flour! I suspect this recipe will work well with other flour types and combinations, but these are the ones I've tried so far.
